The reason why so many of us do not think highly of vegetables is because no one really showed us what to do with them. Pardon my observations… but tired salad leaves sprinkled with a chemical waist for a dressing OR brutally chopped carrots OR, worse - severely overcooked greens are sad -sad -sad. No one will ever like plants that are served with no imagination…… Far more exciting is all those fancy-shmancy beautifully wrapped and well-presented dead substances sold to us as food. Right? Right… unless you want to get more out of your food then just looks and taste.
Imagination is everything.
Here are a few ideas for those of You who are no longer buying into the external programming and discovering their own ways to enjoy food - HEALING, NURTURING, EMPOWERING ways.
Plant Dip #1 - LIFE BEET
< 2 beets, cooked, peeled & chopped
< 5 artichokes, marinated OR freshly cooked
< 2 T Extra Virgin Olive Oil (please be selective about it)
< 2-3 garlic cloves (optional)
< 1-2 T lemon/lime juice, fresh
< 1/4 t Celtic Salt
< 1/2 t black pepper, freshly ground
< 1/2 T dry oregano OR any other herb of your liking
Blend them all into a pretty-looking, super-medicinal treat that will satisfy your entire BEING. If you have any natural medicine person gene in you - you probably already got excited about making it. Your LIVER will love You for it.
